Shepherd's Pie

Today I am back in the kitchen again, I decided to whip up something I have not done before. Today's menu is shepherd's pie, this dish is so easy that even Tom, Dick and Harry can do it. Here are what you need to make one.

6 potatoes
2 carrots
2 onions
600gm of Minced beef or any other meat you prefer
beef stock
tomato paste
black pepper
salt
herbs
Parmesan cheese
butter
cream
Maggi seasonings/Worcestershire sauce
servings for 4 to 6

First boil the potatoes, until it is soft. Then add butter, cream and mash it up. Once completed, just leave a side.

Chop up the carrots and onions, put them in a pan. cook it for a few minutes, then add the beef. add salt, pepper, herbs, and beef stock, stir a little and let it simmer. Then add tomato paste and Maggi Seasonings sauce, stir and taste it. Add more sauce or stock for you desired taste, let it simmer a little.

Transfer the whole thing into a plate, then put mash on top. Spread evenly, so that it covers the meat properly. I made a little texture on it with a fork, finally touch is to add grated Parmesan cheese on it.

Lastly put it in an oven, back for 15 minutes to get a nice brown color over the cheese and mash. Shepherd's pie, is ready to serve.

Grilled prawns

Since my folks are not around, I decided to cook dinner tonight. Thank God I have recovered partially from the blasted cold, otherwise I would not even bother making dinner. I had some left over tiger prawns in the fridge, I decided to try something new for me. Grilled prawns with cheese, I have never cooked this before and so here it goes.

First you need four tiger prawns, the bigger the better. garlic, onions, black pepper, salt, parsley herbs and other herbs that compliments seafood, butter and cheese of course. First cut the back of the prawns to split them, then season it. Then place it on pan with low heat, then when it's cooked already place the cheese on it and wait for it melt.

What do I actually think of it? I think there are a lot of rooms for improvement. I have forgotten to cook the onions and garlic, I have also forgotten that I should sear the prawns first. Then I should not have added the garlic and onions, it has over powered the natural sweet taste of the prawns. The cheese did not turn out how I wanted it to be. I guess I have not cook for quite sometime already, so I shall do a little research and I will let you guys know for the new improved recipe. In the meantime do not try this recipe yet, it was a disaster for me but if you do want to try by all means I shall not be held responsible for any Diarrhea that occurred or better yet get yourself some charcoal pills.

Right or wrong?

As we know the role of becoming parents are tough, teaching their kids the 1001 things. It is practically so hard when they pop up a question, a question I think most people cannot even answer. Like for instance, when kids ask where do babies come from and other related questions. How do parents react? they get embarrassed and give very amusing answers.

It was last month when I was shopping with Justin and a friend, There was a lady with her young daughter. We were walking pass a shop, the shop happens to be a condom shop. I over heard their conversations in Mandarin

Mother: You can go to any shop but you cannot go to that particular shop
Kid: why is that?
Mother: ... because people will laugh at you
Kid: ohh......
Mother: Just don't go to that shop, it's a bad shop and a bad thing.

I was kind of surprise how adults are actually teaching their children, I don't know is it a good thing or a bad thing that lady just did. So if you happen to be in a situation like that lady, how would give a proper explanation or an answer to your kid?

Ratty New Year Part 2

So after many jumps, it is time for the reunion dinner already. This year they did not cook tons of food that could fed an entire long house family, instead it was just sufficient for everyone which was good since none has gone wasted. Every year, I would always go through the trouble of bringing the Yee Sang back to Limbang. What is a Chinese new year celebration without tossing the Yee Sang?

After dinner we had some drinks, some of wondering around the house while waiting for the clock to strike midnight. Me and Cousin fell asleep! They woke us a few times to let us know that is minutes till midnight, but our snooze mode was still on. Finally we go up, it was like a warzone and you can feel the shockwave coming down. You can see fireworks everywhere in Limbang, we assume that fat cats are competiting to see who has the biggest boom of the night. Thus we enjoyed the firework showdown, such a beautiful sight and they must emptied their wallets to do so.

It is day one of Chinese new year already, cousin Rachael has to go back to Brunei already. Since she is leaving back to Melbourne very soon, before they left we had a group photo sessions of the cousins. Baby Zephyr is just so darn adorable, we just to take photograph of him.

I think blowing up things runs in the family blood, we can blow up almost anything you want. But we could not blow up the pamelo, we had be warned. It has been a wonderful time there, great food, great company and great fun. Till then, we will meet again in Limbang.

Ratty new year

Gong xi fatt chai! I am sorry for not informing that I was away during Chinese new year, some of you might know that every year I always go back to Limbang to celebrate Chinese new year with my families. I am glad that Maswings has taken back the rural air routes from FAX, but with a price that burns a hole in your wallet. Limbang may always have been a small little town, but I always look forward to go since this is the only time we gather together for the reunion dinner and it is a great get away from the city life.

While the aunts were busting their butts in the kitchen preparing for dinner, we went to town to complete some last minute errands. We decided to drop by the water front for a little photo shoot, my couisns and my sister decided to do the super famous smashpop jump.

Enough with the jumping, we all went back to prepare for the new year's eve. What is a Chinese new year without any explosives? I love explosion, it is just so fascinating to see things blow up. My nephew Tyler was excited to see fire crackers, we taught him to say "boom boom" and after that he wants to see more boom boom. The ladies decided to do another jump, I must say the jump is quite addictive. I myself did a jump, thanks to cousin Devona for taking the shot. Come back again for the reunion dinner and for boom booms.

Save the Lions

We all know that there are a lot organizations out there, who is doing a good job on conserving the the environment and protecting the animals. Such big well known organizations, like PETA, WWF and others. As we know the lucrative offer from the black marketing for wild animals products is very high, people are willing to do anything to get the greens. If there is no more tiger or leopard or any other animal skins, the poachers might just go for the lion's skin. So let us all do our part to save the lions from becoming this.
